Did MGM ever do any OGs that were remakes of Roach-era shorts?

For the most part, no. If any material was reused in the MGM, it was usually a gag. There were a few exceptions.
Men in Fright is somewhat reminiscent of No Noise, but not really a direct remake. A Gang member has his or her tonsils taken out, and there's a gag involving laughing gas. That's about it.
Tiny Troubles borrows a gag from Baby Clothes and Free Eats - the idea of a midget passing himself off as an infant. Otherwise, the story doesn't match either of its two predecessors.
Duel Personalities borrows the plot from Heebee Jeebees - somebody gets hypnotized.
Cousin Wilbur uses the 'fight behind the fence' gag from Our Gang.
The Big Premiere is a reworking of Better Movies.
Kiddie Kure reuses a story from Tire Trouble and Second Childhood - a wealthy individual is believed to be sick, until the kids reintroduce he or she to fun.
Fightin' Fools reworks the first half of Dogs of War!
Rover's Big Chance reuses Playin' Hookey's plot - the kids' dog is hired to participate in a movie.
